Tender Chicken a la Annabel Karmel: What I am making monday

Have you heard about healthy baby-food making Annabel Karmel??
She is a GENIOUS. [and thanks to Sarah Robinson for introducing me to her food!!]
I am a sucker for good chicken, mashed potatoes and broccoli. Definitely my go-to comfort food.
Especially when I found this great little recipe in one of AK's baby food books. I usually overcook chicken or just make it extremely dry. It turned out SO tender, and I have yet to make an AK meal that I didn't love. More on the other stuff in weeks to come. Who says baby food can't be good??

Tender Chicken Fingers [this is the doubled version]
4 small skinless boneless chicken breasts cut into little finger-size strips
3-4 tablespoons of olive oil, for frying
12 Tbsp milk
1/2 cup yogurt [I used nonfat greek]
2 tsp lemon juice
2 tsp Worcestershire sauce
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp paprika
4 cups puffed rice cereal
1/2 cup grated parmesan cheese
1/2 tsp dried oregano
2 eggs
2 tsp water
3 Tbsp all-purpose flour

Mix marinade ingredients in large bowl, marinate chicken in it overnight. Put first 3 ingredients for coating in food processor. Spread crumbs on a large plate. Beat eggs in bowl with water. Spread flour on another large plate. Remove chicken from marinade, shaking off excess. Coat in flour, then dip in egg and coat in cereal crumbs.

 Here it is cooking in the skillet, with a tiny bit of olive oil, 4-5 mins per side. 
I think next time we are going to try to bake it on the oven to make the process a little faster (?).
 The final product: a little burnt but so so good. Om nom nom.
 little d was a little tentative at first with the new food combination...
 but eventually the tastebuds won out :)
